Keebler Coconut Dreams Parfait

I was inspired one morning by watching the Food Network.  Sandra Lee was making a s'more parfait.  I came up with this idea based on what I found in my pantry.  When I was a kid, the Somoas were my favorite Girl Scout cookie.  Keebler makes a version that is just as good.  Admittedly, I ate this for breakfast right after I made it but it is probably more appropriate for a dessert! 


Ingredients:

One banana cut into thin slices
Graham cracker crumbs
Keebler Coconut Dreams cookies crumbled
Shredded coconut
Sweetened whipped cream (Redi Whip is fine or you can make your own)
Butter


Directions:

In one bowl, combine 2 cups whipped cream with thin slices of banana (set aside).

In second bowl, pour about 1 cup of graham cracker crumbs.
Add at least two crumbled Keebler Coconut Dreams cookies to graham cracker crumbs.
Melt about 2-3 Tablespoons of butter and add to graham cracker mixture and stir.
Toast 1/2 cup shredded coconut and add to graham cracker mixture and stir.

Using your favorite parfait glasses, layer with each starting with graham cracker mixture.  Use the end of a knife to gently press down the graham crackers.  Add a layer of banana cream.  Alternate the layers until glass is full.  

Refrigerate for a short time (30 minutes) to get the cream to set.  Eat the same day, otherwise the graham crackers will get mushy.

Makes two servings.

Variations:

I was thinking that I could have blended the bananas into the cream so that it was smooth.  
Adding chocolate chips could be nice for some other texture.
Maybe a layer of pudding- banana pudding, chocolate pudding or vanilla pudding would be good.
